Guys, this basic bitch loves her some pumpkin. And food in adorable mason jars. So this one is a slam dunk home run. But, as you know, health food is not usually my M.O…. I’m more a tacos-and-cake kinda girl. But baby’s been having some trouble squeezing into my pants since the binge that kicked off with the wedding and continued on our honeymoon, while Tony was working in Canada, my trip to Austin, and the general ennui of “I’ll never have to fit in a wedding gown again.” So, I’m particularly thrilled to share a healthy version of this normally-sinfully-delicious dessert. I’ve had it for breakfast every day this week, and plan to continue to do so until 1) my pants fit again, or 2) I get sick of it. (Can’t really see either one happening, if we’re being completely honest.)

I came across the recipe on Pinterest. It’s from Amy’s Healthy Baking, and I am the biggest fan. I did the recipe x8, so I could use up a full 32 oz can of pumpkin and a full 32 oz container of Greek yogurt (and also have enough to last a few days for Tony, my parents who are in town for the weekend, and myself). I also added a pile of ground flaxseed, because it just sounded healthy. It’s super easy (I dumped everything in a bowl, mixed it together, and sorted it into jars in about 10 minutes). And for someone who is perpetually running late, it’s the perfect “grab and go” breakfast that prevents me from stopping at McDonald’s.
RECIPE (cut it in half if you’re making it just for yourself, but still want enough to last for a few days – I made the recipe as stated below, and it lasted Tony and me about a week):
32 oz pumpkin puree (not pumpkin pie mix. Pure, un-messed with PUMPKIN.)
32 oz nonfat plain Greek yogurt
2 cups old-fashioned oats (I added an extra 1/2 cup ‘cause I LOVE CARBS)
8 tbsp Truvia
2 tsp ground cinnamon
And I also added a pile of ground flaxseed for Omega-3’s. Didn’t measure. Just dumped it in. It doesn’t really taste like anything as far as I can tell, and it does a body good!
Mix it all together, stuff it into airtight jars, put it in the fridge overnight, and you’re good to go. Serve cold and thank me later (or now, like maybe in the Comments section below. Compliments are my lifeblood.) HAPPY WEEKEND!
